Pesto Sauce

Pesto is a sauce originating in Genoa in the Liguria region of northern Italy, and traditionally consists of crushed garlic, basil, and European pine nuts blended with olive oil, Parmigiano Reggiano (Parmesan cheese), and Fiore Sardo (cheese made from sheep's milk). (source: We love cooking with Pesto Sauce because it adds that zinger to any meal! Try it on rice, fish, chicken, sandwiches, etc!


Pesto Sauce

Garlic - 8-10 cloves

Pine Nuts OR Pistachios (don't use both)

Pine Nuts - 4 tbsp. (toasted)

Pistachios - 6 tbsp. (toasted)

Kosher Salt - 2 tbsp.

Black Pepper - 2 tbsp.

Lemon Juice - 1 tsp.

Washed Basil - 4 cups

Italian Parsley - 2 cups

Extra Virgin Olive Oil - 1 cup

Butter Soften - ½ stick


Put all ingredients in a food processor and puree.

Serve on fish, with pasta, on sandwiches, or whatever you want to add it to! Be adventurous!
