Ingredients

Light Waffles Mix

2 ½ cups sifted all purpose flour

2 tsp baking powder

½ tsp salt

3 eggs

2 cups milk

½ cup vegetable oil

Directions

1. In a large bowl, whisk together the eggs, oil and milk.

2. In a separate medium bowl, whisk together the flour, baking powder, salt and sugar.

3. Whisk the dry ingredients into the wet ingredients just until well moistened, if over mixed finished product will be tough.

* Every waffle iron is different, follow manufactur- ers directions for heating.

4. Spray grids with cooking spray and then fill with a little more than 1/3 cup but less than 1/2 cup of batter (here again waffle irons vary, you may need to experiment to see what works for your waffle iron).

5. Lift lid of waffle iron and check brownness after about 3 minutes; let waffle continue to cook until desired brownness.
