Ingredients

Chocolate Lava Cake

5 oz – Semi Sweet Chocolate

2.5 oz – Bitter Sweet Chocolate

3/4 Cup – Unsalted Butter

4 Each – Eggs Yolks

3 Each – Eggs Whole

3/4 Cup – Sugar

3/4 Cup – All Purpose Flour

Directions

Butter 8 – six oz ramekins, and dust lightly with flour. (not the “All Purpose Flour” listed above)

In a double boiler, melt the chocolate and butter together. Mix them. Once melted, let it cool.

Turn the mixer on medium speed, add the eggs, yolks, and sugar blend until it gets light yellow and fluffy and thick.

Add the flour to the mixer a little at a time, and mix for 3 minutes.

Add the cooled chocolate mixture, and incorporate all scraping the sides. (mix for 2 minutes)

Preheat oven to 475.

Put 5 – 6 oz of the cake mix into each ramekin, and refrigerate for 1 hour.

After 1 hour in the refrigerator, place all 8 ramekins on a sheet pan and bake for 11-13 minutes.

Once the cakes get Puffy, shake them lightly and if they move like “Jello” they need more time, if they don’t move, take out and serve with vanilla ice cream.
